Somewhere in your fermenter, several billion single-celled organisms are about to embark on the most productive bender of their short lives. They have one requirement for this: sugar. Any sugar. They are not fussy. Given the choice between a fine artisanal dextrose and whatever’s been sitting in your pantry since the last time you made pavlova, yeast will cheerfully eat both without complaint, then produce alcohol regardless.
This is, frustratingly, exactly the problem. Yeast’s total indifference to what it’s eating means the responsibility for making a good decision falls entirely on you, a creature with taste buds and opinions, neither of which yeast possesses. Get the fermentable wrong and yeast will still make beer. It just won’t be beer you particularly want to have made.
What’s Actually In The Bucket (Besides Your Hopes) #
“Fermentable” is doing a lot of quiet work as a word. Some things ferment out completely and vanish without a trace, leaving nothing behind but alcohol and no evidence they were ever involved. Some things ferment out completely and leave the beer worse for having done so – thin, dry, and vaguely accusatory. Some things refuse to ferment at all and simply loiter in the finished beer, adding heft without ever lifting a finger.
Knowing which is which is the difference between a beer that tastes like beer and a beer that tastes like something regrettable happened to a soft drink.
The Sugar Bowl Is Not Your Friend Here #
Every new brewer has this thought exactly once, usually while standing in the kitchen holding a kit can in one hand and a bag of ordinary white sugar in the other: surely sugar is just sugar?
It is not just sugar. It is, chemically, extremely close to being just sugar, which is precisely what makes this such a convincing and expensive mistake. Plain cane sugar ferments out beautifully – fast, complete, and utterly without personality. It contributes zero body, zero malt character, and zero evidence it was ever involved, beyond a beer that finishes thin, dry, and carrying a faint cidery twang nobody ordered. This is the single most common reason a first kit beer tastes slightly apologetic: the instructions said “add 1kg sugar,” and someone, somewhere, took that instruction with tragic literalism.
Fortunately, there’s a whole lineup of better options coming up, every one of them with more personality than a sack of white sugar could ever hope to have.
Dextrose: Sugar’s More Focused Cousin #
Dextrose is what happens when sugar goes to the gym and gets serious. Yeast processes it almost instantly, no negotiation required, and it ferments out cleanly – strength without the cidery baggage plain cane sugar drags along behind it. If your kit instructions still say “add sugar” out of habit, this is the polite substitution.
It is, admittedly, still a one-trick pony. A very good trick. Just the one.
Meet The Rest Of The Cast #
Before the blends below start throwing these names around like everyone already knows them, three quick introductions.
Maltodextrin doesn’t ferment even slightly – yeast looks at it, shrugs, and gets back to work, which means it survives all the way to the glass fully intact, quietly padding out body and mouthfeel without adding flavour or nudging the ABV up a single decimal point. Home brewers have called it corn syrup for decades, even though the name is wrong on every count: real corn syrup is a liquid, this is a dry powder, and it isn’t even reliably corn – wheat and potato starch do the same job, and in Australia wheat’s actually the more common source. It earns its keep especially in light and session beers. If one of those comes out thin, the obvious fix is more malt – but that brings malt character and colour along with it, which is exactly what a light, crisp beer doesn’t want. Maltodextrin adds the missing body without any of that baggage. But it’ll happily rescue any beer that’s come out thinner than planned, session or not. Think of it less as an ingredient and more as scaffolding – there to hold the beer’s shape up, never to be tasted directly.
Malt is where the actual “beer” part of beer mostly comes from – malted barley, dried and ground down for blending, carrying genuine malt character, colour and a decent chunk of fermentable sugar all at once. It’s the ingredient every enhancer blend below is really built around: swap in more of it and the beer gets richer, maltier, more like something you’d actually call beer rather than alcoholic water with ambitions. Lactose is milk sugar, and the one fermentable here that yeast genuinely cannot break down – not won’t, can’t. Brewing yeast simply doesn’t carry the enzyme for it, so it sails straight through fermentation untouched and lands in the glass exactly as sweet as it started. This is the entire reason milk stouts exist: without lactose, a milk stout is just a stout having a naming crisis.
Brew Enhancers – Someone Already Did The Homework #
Here’s where dextrose finally develops some social skills: paired with malt and maltodextrin in a ratio someone else has already argued about on your behalf, so you don’t have to. The rule of thumb is embarrassingly simple – more dextrose and less malt keeps things clean and crisp, more malt piles on body and character – and six ready-mixed combinations exist purely so you never have to say that rule out loud to a stranger behind the counter:

Worth knowing too: Coopers run their own enhancer range on exactly the same logic, so if a recipe insists on one by name, it’s not being precious – that’s just a recipe with a favourite.
Malt Extract Cans – Which One, and When #
Quick point of order first, because it’s an easy thing to mix up and an embarrassing one to get wrong out loud: the kit can itself – your Morgans Australian Lager, your Coopers whatever-you’re-having – is already the concentrated, hopped wort. That’s your base. That’s where the hop character and the beer’s entire personality come from, and nothing below is trying to replace it, upstage it, or quietly take credit for it.
What we’re talking about here is the same idea with its sleeves rolled up: unhopped malt extract, sold separately, for when a kit needs more than the blends above can politely offer. It isn’t really a different ingredient to those – just the same trick taken further, fermentable sugar and genuine malt character together, poured from a tin instead of scooped from a bag, in a considerably less restrained dose. Roughly two-thirds to three-quarters of it ferments out, same split as a blend’s dextrose-and-malt combination, while the rest hangs around afterwards as body – except a can is hauling in a lot more malt than 500g mixed into a bag, so the effect on the beer is bigger too, the way a marching band is a bigger effect than a kazoo.
The general colour spectrum, for context: malt extract runs from extra pale (so pale it’s barely committing to being malt at all) through light and amber (more body, a gentle toffee sweetness creeping in) to dark and roasted (coffee, chocolate, faint suggestion of a bonfire). As a rough rule, lighter extract suits lagers and pale styles where the hops are meant to be doing the talking, and darker extract suits stouts and porters, where the malt has finally been handed the microphone.

Same base kit, seven entirely different destinations, depending purely on which tin joined the party.
Liquid can, or powdered blend? This is the actual decision most people are trying to make, so here it is plainly. A can of liquid malt extract is concentrated and generous – roughly 1.5kg of genuine malt character in one hit – so reach for one when you want to meaningfully reshape the beer: turning a light kit into something amber, or giving a thin-looking stout the backbone it’s missing. It’s sticky, faintly annoying to get out of the tin, and worth it. A powdered blend, by contrast, is a smaller, pre-balanced top-up – dextrose and malt already measured out for you – built for the more common job of lifting a kit’s alcohol and body a modest, sensible amount without overhauling its character. If you’re renovating the beer, grab a can. If you’re just topping it up properly instead of reaching for the sugar bowl, grab a blend.
The Two-Can Method (Or: When One Isn’t Enough) #
Somewhere in Australian brewing folklore is a technique with the deeply unserious name of “toucan” brewing – two kit cans, topped up to the usual 23 litres, and no sugar or blend anywhere in sight. Since malt extract is mostly fermentable, as established above, two full cans hands the yeast considerably more to work with than one can plus a kilo of sugar, and the result is a maltier, fuller-bodied, generally stronger beer built entirely without refined sugar.
There is, inevitably, a catch. Kit cans arrive pre-hopped, so two cans means double the bitterness as well as double the malt, and nobody warns you about this until it’s already in the fermenter. Two aggressively hopped cans together can turn out genuinely unpleasant. The safer version of this experiment is doubling up the same mild kit – two lagers, two draughts – or pairing a mild base with something complementary, rather than throwing two hop-forward kits at each other and hoping for the best. Treat it as an advanced move once you’ve got a few standard batches under your belt, not a first-brew shortcut.
The Short Version, For The Impatient #
- Kit says “add sugar”? Use dextrose, not the pantry.
- Can’t be bothered with ratios? A blend – 50/50 if you’re not sure, dextrose-heavy for light and crisp, malt-heavy for full and characterful.
- Chasing something strong but not heavy, like a tripel? Body Boost.
- Want it to actually taste like beer? Pick a malt extract can that matches the style you’re chasing.
- Want maximum malt character and no refined sugar at all? Two mild kit cans instead of one – just watch the bitterness.
- Beer came out thinner than expected? Maltodextrin.
- Milk stout? Lactose, or it’s just a stout with an identity crisis.
Your yeast, for the record, remains completely indifferent to all of this. It will eat what you give it and make alcohol regardless, with the enthusiasm of a creature that has never once had a bad day. You’re the one drinking the result. Choose accordingly.
